How to Make Camp Oven Roast Vegetables

Camping season is here, and if you are like many who have enjoyed a few too many beers, hot dogs, and pizzas while away, it might be time to cook healthier meals. A camp oven roast with vegetables is a great option. The methods below will help you practise healthy eating and enjoy vegetables at your campsite.

Method 1: Specific

What You’ll Need

  • Silverbeet
  • Mushrooms
  • Celery
  • Vegetable stock cube
  • Vegetable oil
  • 1 can diced tomatoes
  • 1 can kidney beans
  • Pink rock salt
  • 2 diced garlic cloves
  • 1 diced brown onion
  • Smoked paprika
  • Carrot

Instructions to Cook

  1. Cut up the vegetables into large pieces.
  2. Add oil to the camp oven, then add the garlic and onion and brown them off. Sprinkle in the smoked paprika.
  3. Place the remaining vegetables into the camp oven, except for the celery and mushrooms. Add pink rock salt to taste.
  4. Stir for one minute.
  5. Add the diced tomatoes and kidney beans, cover with vegetables, and let it simmer for 15 to 20 minutes. Then add the celery and mushrooms.
  6. Cook for another 20 to 30 minutes or until the vegetables are evenly cooked. Serve with bread or damper.

Method 2: General

1. Choose Your Veggies

Which vegetables do you enjoy roasting? Visit your local farmer’s market or grocery store to see what’s in season. Zucchinis are excellent when roasted, but you can also choose bell peppers, mushrooms, red onions, and potatoes.

After selecting your vegetables, wash them thoroughly, dry them, and chop them evenly. Cutting vegetables into different shapes will introduce varied textures.

Add a small amount of olive oil, pepper, and sea salt, then mix well.

2. Cover the Vegetables

Place your chopped vegetables into an aluminium tin and cover with foil. Use a double layer to ensure the container is sturdy enough to hold all the vegetables.

3. It’s Time to Roast

Once your campfire has burned down to hot embers, place the covered vegetables on the smoking wood. It will take around 25 minutes for them to cook.

Stir the vegetables every 10 to 15 minutes to prevent burning.

After 25 minutes, your vegetables will be perfectly roasted and even more flavourful than conventional oven-roasted vegetables. If you are tired of hot dogs on camping trips, roasted vegetables are a healthier and delicious alternative.
