Camping season is here! and if you are like many who have just downed too many beers, hot dogs and pizzas while you’ve been away, it might be time to cook healthier and make a camp oven roast with veggies. The methods below will help you practise healthy eating and enjoy vegetables at your campsite.

Method 1: Specific

What You’ll Need

  • Silverbeet
  • Mushrooms
  • Celery
  • Vegetable stock cube
  • Vegetable oil
  • 1 can diced tomatoes
  • 1 can kidney beans
  • Pink rock salt
  • 2 diced garlic cloves
  • 1 diced Brown onion
  • Smoked paprika
  • Carrot

Instructions to Cook

  1. Cut up the vegetables into big pieces
  2. Put some oil and add garlic and onion to brown them off, then put smoked paprika.
  3. Place the remaining vegetables in the camp oven, except for the celery and mushroom. Add enough pink rock salt for taste.
  4. Stir for one minute.
  5. Add diced tomatoes and kidney beans, then mask with vegetables and let it simmer for about 15 to 20 minutes, after which you can add the celery and mushrooms.
  6. Cook for another 20 to 30 minutes or until the vegetables are evenly cooked, then serve with bread or damper.

Method 2: General

1. Choose Your Veggies

Which veggies do you enjoy roasting? Visit the farmer’s market or grocery to check the veggies in season. Zucchinis may be in season, and it’s delectable when roasted, but you can also pick bell peppers, mushrooms, red onions and potatoes.

After picking out your veggies, wash them thoroughly, then dry and chop them evenly. Cut the vegetables into various shapes, which will introduce different textures.

Add a little olive oil, pepper and sea salt, then mix the vegetables.

2. Cover the Vegetables

Put your chopped veggies in an aluminium tin and cover it with foil. Add a double cover to ensure your container is sturdy enough to hold all the veggies.

Having sturdy aluminium tins is a great cooking tool for camping since your camping bag may have limited space.

3. It’s Time to Roast

When you are finally out camping and have already started and reduced your fire, put the covered veggies on the embers of smoking wood. It will take about twenty-five minutes for your vegetables to be ready.

Ensure that you stir your veggies every 10 to 15 minutes to avoid burning them.

After 25 minutes, your vegetables will be well roasted and more delicious than conventional, oven-roasted vegetables. If you are tired of having hotdogs on your camping trips, roast vegetables are a great and healthier alternative.
